INGREDIENTS:

  • 1-2 lb. finely ground alligator meat
  • (or other, if not available)
  • 1 box Italian bread crumbs
  • 1 med. raw egg
  • 1/8 tsp. salt
  • 1/8 tsp. cayenne
  • Fresh mushrooms, cut in sm. pieces
  • (optional)
  • 1/2 tsp. minced onions
  • 1/2 tsp. green onions
  • 1/2 tsp. parsley
  • 1/2 tsp. bell pepper

DIRECTIONS:

  • Mix all ingredients with your hands while gradually adding bread
  • crumbs. Roll into whatever size balls you want. Keep a glass of
  • cold water on the side to dip your fingers in occasionally, which
  • will help the meat mixture from sticking to your hands. Brown the
  • meatballs slightly and drain on paper towels. Then add to red gravy
  • (recipe above). Cook 2-3 hours. Serve over favorite pasta.
