INGREDIENTS:

  • 1 (9") deep dish frozen pie shell
  • 1 1/2 c. Monterey Jack cheese, grated
  • 1 c. mild cheddar cheese, grated
  • 4 oz. can diced green chilies
  • 1 c. half and half
  • 3 eggs, beaten lightly
  • 1/2 tsp. salt
  • 1/8 tsp. cumin

DIRECTIONS:

  • Spread Monterey Jack cheese and half of the cheddar over the
  • bottom of the pie shell. Sprinkle diced chilies over the cheeses.
  • Combine the half and half, eggs and seasonings. Pour carefully into
  • pie shell. Top with remaining cheddar. Bake at 325 degrees for 40
  • to 50 minutes.
