INGREDIENTS:

  • 2 (3/4 lb.) haddock fillets
  • --MUSHROOM STUFFING:--
  • 1/2 c. bread
  • crumbs
  • 1 tsp. parsley
  • 3 tbsp. melted butter
  • 1/2 c. sliced mushrooms
  • 1/2 tsp. salt
  • Dash of pepper

DIRECTIONS:

  • Place a piece of foil (large enough to wrap fillets with stuffing)
  • in a baking pan. Place one fillet on foil and top with mushroom
  • stuffing. Sandwich other fillet on top and garnish with lemons.
  • Wrap fish up in foil. Bake 40 minutes at 375 degrees. Serves 4.
