INGREDIENTS:

  • 1 lb. beef stew meat, cubed
  • 1/2 lb. pork, cubed
  • 4 tbsp. oil
  • 1 1/2 c. chopped onions
  • 1 c. green pepper, chopped
  • 2 tbsp. minced garlic
  • 1 tbsp. chili powder
  • 1 1/2 tbsp. salt
  • 1/2 tsp. thyme
  • 1/2 tsp. cumin
  • 1 1/2 c. water
  • 1 (8 oz.) can tomato sauce
  • 1/2 oz. unsweetened chocolate
  • 1 (30 oz.) can kidney beans
  • 3 c. chopped rind

DIRECTIONS:

  • Cut beef and pork into bite size pieces. Heat 3 tablespoon oil in
  • Dutch oven, brown meat well. Add rest of oil, onion, green pepper
  • and garlic. Cook until soft but not browned. Stir in chili powder,
  • salt, thyme and cumin. Cook 1 minute. Add water, heat to boil.
  • Reduce heat to low, cover and simmer 45 minutes. Stir in tomato
  • sauce and chocolate. Simmer uncovered 25 to 30 minutes or until
  • thickened. Serve chili on bed of beans and rice.
