This fruit salad really has nothing to do with the Fourth of July. You can make it any time really. The reason for the name is simply because the first time I made it was for a 4th picnic and ever since when someone wants me to make it they ask for the 4th of July fruit salad.
It is simple to make and 90% of the time is spent in prep work. Measurements for the fruits are really up to you, less of one thing, more of another, eliminate what you don’t like. I prefer even portions of the fruits myself and generally do a cup of each for a nice size salad, easily doubled or tripled for large parties and BBQs. The only exact measuring that is needed if for the lemon glaze.
Lemon Glaze - Juice of 5 medium lemons - 2 cups of sugar
Mix together and set aside to allow sugar to dissolve into juice. Add water if needed to achieve a thick syrup.
Slice one cup each of the following fruits into bit size pieces: - Papaya - Mango - Kiwi - Strawberries - Star Fruit - Halve a ½ cup each of red and green grapes - 1 cup Raspberries - 1 cup Blueberries
Mix all fruits in a large bowl and add lemon glaze. Mix thoroughly cover with plastic wrap and allow to chill for at least an hour before serving. Mix well just before service. Top with whipped cream if desired.
