A Little Something To Go With Your Summer Fruit by Christine James

The joyous bounty of summer fruits, blueberries, watermelons, and my favorite, peaches, just to name a few.  Fruit that when eaten alone is a wonderful eating experience.  Sometimes though, you want to dress it up a bit, make it even more special.  It is to this end I suggest pound cake.  Now before you start calculating calories and fat grams please know I am not suggesting you incorporate this into your normal diet.  Use it for a special dessert for a meal with friends, or something a bit different from the traditional birthday cake.

  • 4 cups AP flour
  • 3 cups sugar
  • 1 pound of softened butter
  • ¾ cups milk
  • 6 eggs
  • 2 teaspoons vanilla extract

  1. Pre-heat oven to 325°.
  2. Place four, sugar, butter, milk eggs and vanilla in that order in your mixer.  Beat on low for 1 minute.  Stop and scrape down sides of bowl.  Beat on medium speed for 2 minutes.  Pour mix into a greased and floured 10 inch tube pan.
  3. Bake for 1 ½ hours or when cake tester comes out clean. Cool in pan on wire rack for 10 minutes and then remove from pan and cool completely on the rack.
  4. Top with summer fruit of your choice!
