Guacamole is one of my favorite snacks. Well, to be honest, I like a lot of snacks, but this green dip tops the list. My husband doesn’t like it, so I’ve had to pare down my recipe so it’s guacamole for one.
Here’s the recipe:
1 organic avocado pitted and removed from the skin
1 organic plum tomato chopped
1 clove of organic garlic minced
Juice of 1/4 organic lemon
Salt
Pepper
Cayenne pepper
Organic cilantro (I used dried, but fresh is better)
1 tablespoon organic lime juice
Chips for testing
In a medium bowl squeeze the quarter lemon over the avocado to prevent it from oxidizing and turning brown.
Mix in the tomato, cilantro and garlic and use a masher to achieve a chunky consistency.
Add salt, pepper and cayenne pepper to taste. Add the lime juice to thin out the mixture a bit.
Use the chips to taste.
Mmmmm! Some people add green onions to their guacamole, but raw onions give me heartburn, so I don’t.
For the chips, I usually use Garden of Eatin’ Red Hot Blues, but I didn’t have any in the house. This chip is a Santita white corn chip. They’re not organic, but they are really tasty.
