INGREDIENTS:

• 1 1/2 lb. zucchini, coarsely grated
• 5 scallions, chopped
• 2 tbsp. grated onions
• 2 1/2 c. grated Cheddar cheese
• 1/4 c. chopped parsley
• 3 eggs, lightly beaten
• 3 tbsp. flour
• Salt
• Pepper

DIRECTIONS:

• Sprinkle zucchini with salt. Allow to set 20 minutes. Squeeze
• dry and mix in the bowl with remaining ingredients. Season with
• salt and pepper. Heat 1/2 cup oil in frying pan, drop tablespoons
• of mixture into the hot oil and cook until golden brown on both
• sides. Drain on paper towels. Serve hot or cold. Can be served as
• a side dish.
